In addition to being a first time purchase for Little Sister, the coffee from the Manos Juntas Micromill features unique processing methodology, culminating in a coffee we are very excited about! Managed by the Colombian coffee exporter Banexport, the Manos Juntas Micromill was constructed and managed to streamline and support the rising popularity of naturally processed coffee in Colombia. In addition to not having to acquire the machinery, space, and time it takes to process coffee naturally, farmers are paid upfront above market value for ripe coffee when they deliver it from their nearby farms. The cherries are then placed in large hermetic tanks for a five-day-long anaerobic fermentation, before they are taken to solar dryers. Drying takes 30–45 days, closely monitored. The final result is a cup imbued with the bright flavour of the coffee fruit, anchored by a subtle milk chocolate finish.
